Cefas shellfish testing
Oysters and other bivalve shellfish may accumulate pathogenic
bacteria or viruses if their growing water becomes contaminated
with faecal pollution. Occasionally this can lead to food poisoning
incidents in humans (gastroenteritis), particularly if affected
shellfish are consumed raw.
Bivalve shellfish may also accumulate marine toxins when toxic
phytoplankton blooms occur. These toxins are heat stable and
therefore not removed by cooking. If present in high enough
concentrations, they can be responsible for severe poisoning
incidents.
Our Cefas Shellfish Testing (CST) service, operated by Cefas

including norovirus, E.
coli, Salmonella spp. and marine toxins
(ASP, PSP and lipophilic toxins) in all major bivalve shellfish.
